I think about you every single day. Cant wait to see you again, but you are still getting a firm whoopin for leaving me so early. I love my Becca Wecca.

IDEA!

OK, so its no secret that cooking isn't my strong point. In the past I've been known for my Cajun style - everything blackened ;). I've been really trying hard to improve and try new things. Some have worked, some haven't. I really cook much better when its just me and the boys but when I have company I fall to pieces, forget ingredients, use wrong temps.... you name it, I do it wrong. Tonight we used the grill and cooked up Pork Loin, Butternut Squash, Smashed Potatoes and yummy Tuscan style garlic bread. It was GREAT! The last Pork Loin that I grilled came out fabulous but when cooking today I questioned my skills AGAIN. I've been thinking about it all day and have finally decided to document my trials. I plan to take pictures and journal the entire technique used. (good and bad) SO.... I'm adding a new page to my blog. I dont know what I will title it yet but I hope to start tomorrow. This should be interesting. Whoo-hoooo!

Today Isaac told me the funniest story EVER.....
"The other day when you were gone, the wind blew a door shut upstairs. I thought a guy broke in so I hid behind the curtains. I heard the door bumping a lot so I figured the guy was locked in Chances room so I came out from behind the curtains and finished watching my movie." I asked him why he didn't call me...... "I thought the guy was stuck in Chances room so I thought, oh too bad for him." Oh my gosh! Way too funny! He didn't call me, he didn't call Chance and he didn't say a word when we got home! He was perfectly fine watching a movie while a stranger was stuck in a room upstairs! (I then had to stand behind the curtains to show him that he didn't choose the best place too hide.)
NEVER a dull moment.

Cake pops were a HUGE hit!

WOW!
I know that our cake pops are yummalicious but I had no idea that it would be such a hit!
Yay!
I've been asked to post a tutorial. I didn't have much time so I kinda threw one together.
You will need:
cake mix - any flavor
frosting - any flavor
food processor/magic bullet/ninja
candy melts/chocolate chips (flavor and color of your choice)
sucker sticks
Make your cake according to directions on box (after making several batches of pops I tried making a cake in the microwave just to save a little time and it worked like a charm! I used a 9x13 pan and cooked it for about 10 minutes on 70% power). Let cake cool completely. Remove cake from pan using your hands. Tear small chunks and place them in your food processor. I used a ninja and I was able to fit the entire cake in at one time. Pulse the processor until the cake is in small crumbs.
Open your frosting and place a heaping spoon-full into processor. Pulse until well mixed. At this point its kinda up to you and what you prefer. The more frosting you add the 'gooier' your cake balls will be. I like mine a hair on the dry side so I use 2 heaping spoon-fulls. You want to add enough frosting to make the mixture soft and easy to roll into balls and to hold that shape. Now you can start rollin'. I rolled about ten or so and place them on a small plate and then put them in the freezer. I contiue this until all the mixture has been used. Once you have that done, its time to get out the candy melts.

Cake Pops ROCK!

We used mint, white chocolate, milk chocolate and peanut butter to dip our cake pops in.
We decided to make 2 cake flavors We thought cake pops would be fun to give Isaacs new teachers so we did a practice round. Yummy!

Calla

One of my favorite flowers is the beautiful calla lily. I'm working on different techniques to see what works best for me. Too fun!

Fondant

Buying fondant can become quite expensive so I tried making my own using a marshmallow fondant recipe. It works great and its a blast to make. One batch can cover at least 2 full size cakes and costs about $2.50. SWEET! (Our first EVER fondant cake. We made a bunch of mini cakes to practice the technique.)
(Erica gets a little messy making her first batch of marshmallow fondant. Tons of fun and powdered sugar in every nook and cranny!)

My latest 'thing'

Sugar flowers.......... I'm a junkie! I absolutely love making these flowers. Gumpaste is so easy to work with its amazing! Every flower I make inspires me in some way for my next creation. Try it, You'll LOVE it!

(I'm still working on my fondant skills. I am learning how to properly crumb coat to provide a proper surface for a beautiful smooth fondant finish, so stay tuned)

Chancers new ride!

Oh my goodness. Chance turns 16 this month and my days with my baby boy are numbered. Its killing me! I cant even think about it.
He just got a new shiny truck and he has a hard time sleeping at night because hes so excited. I am so proud of him for working hard and saving his money. What a stud!
So now he has a truck and new plates. The only thing missing is his license and thats just around the corner.
