Easy to make meals that can be
frozen in single servings



Meatballs!
again, another easy recipe that can be customized to your family


1 lb. ground beef
1 lb. sausage
1 chopped onion
bread crumbs (or croutons chopped in processor)
1 large egg
Italian seasoning to taste

For my family I use one lb. ground beef and one lb. sausage I also add a small amount of 'hot' Italian sausage to give a little extra kick.
For bread crumbs I use garlic cheese croutons chopped in a food processor.
(when making these for my parents I just use plain breadcrumbs either some that I make myself or purchase in the store and I do not add the hot sausage.)


combine all ingredients thoroughly add more breadcrumbs if mixture is too 'sticky'.
roll into balls and fry in oil until cooked through.  Remove from oil and place on towls to drain.  Meatballs could also be baked in the oven until cooked through.

To freeze:  let meatballs cool then place in freezer storage containers and freeze.




Oven Baked Beef Stew

(The beauty of this recipe is that you add what and how much of the ingredients that your family likes.  You can change the meat to turkey or pork, add more carrots or celery, add less mushrooms, no onion etc. Totally customizable yummy stew!  Yay!)

Beef stew meat cut in 1" pieces
Cut carrots
Onion chopped
Carrots chopped
Mushrooms sliced
Golden Mushroom Soup
French Onion Soup
Sweet potato chopped

Place chopped ingredients in roasting pan (exception - if adding sweet potato, add potato pieces during the last 30 minutes of baking time).
Pour soups over chopped ingredients.
Cover pan tightly with foil.
Place roasting pan in oven preheated to 350 degrees for 3 hours.

To Freeze:  let stew cool and place stew in freezer containers, label with date, ingredients and warming instructions (heat to bubbling, serve over mashed potatoes)
