Chinese Chicken Salad

I love Chef-in-training, she has amazing recipes!  For some reason the Chinese Chicken Salad just screams spring to me.  I cant wait to try this, I think I'll add cucumbers and sprouts.  I think I'll even maybe try a different dressing like ginger sesame or even a yummy raspberry vinaigrette....
